Y como puede ver, se crea el enlace simbólico, pero el nombre no ha cambiado y recibí el siguiente error:

La otra cosa es que el enlace apunta aleatoriamente a sdb, sdb1, sdb2, etc.

Cambia cada vez que conecto el pendrive.

La tarea aquí es cambiar el nombre del dispositivo de sdb (o lo que sea que sea) pendraky también crear un enlace a él. El error afirmaba que "no se puede cambiar el nombre de los nodos del dispositivo kernel". ¿Significa que no puedo cambiar el nombre y que todo lo que puedo hacer es crear enlaces simbólicos?

Según el manual de udev, no hay forma de cambiar los nombres de los archivos en el /dev/directorio:

NAME
The name to use for a network interface. The name of a device node
cannot be changed by udev, only additional symlinks can be created.

Crean tres enlaces: pen1, pen2, pen3. Cada uno de los cuales se vincula al dispositivo sdb correspondiente (o lo que sea que sea), y simplemente los abre y los monta en los directorios especificados a través de la herramienta udevil.

Solo crea enlaces simbólicos. Lo estoy haciendo para todos los dispositivos que necesitan tener los mismos nombres sin importar qué.
